Spicy Shrimp & Fresh Zucchini Cakes

Okay, so I had the most gorgeous shrimp ever this week (which considering the Gulf Coast Oil Spill) we might not be using shrimp as often now- I heard the prices are gonna JUMP!
Anyway, I wanted to make something spicy and cajun since most of the time I use shrimp in pasta or rice dishes and the flavors are more subdued. I took my trusty ole cajun and old bay seasoning and well, just go ahead and Slap your Mama because they were incredible.

Since I had just made it back from the farmer’s market, I decided to use the zucchini I had purchased and this just upped the whole meal from 3 stars to 5 stars. Yes, you heard it right. I grade myself with stars! LOL!

I mixed freshly sliced zucchini with sauted onions and garlic and made little zucchini cakes. Cute, fun and so yummy. They were the perfect texture and perfect blend of flavors with the freshness of the zucchini. So appealing and delicious. A must for the kids because although they are slightly fried, your only using butter and it is full of veggies!

    That looks absolutely tasty. I grew up on the MS Gulf Coast. Shrimp there has already went up in price majorly so we better all enjoy it while we can.
