Easy as 1-2-3 Risotto


The challenge: to make the perfect risotto. The contenders kitchen bellecious verses the well known down and dirty arbirio rice. Let the games begin. Are you nervous already? Don’t be. I don’t know why a lot of people are so scared to make this simple rice dish. I guess before I actually made it a few weeks ago I thought it was kinda hard myself, but not impossible. I decided to take on the challenge and see just how time consuming it really is.

After an hour or so of research- wait a minute! Did you know that I research a lot of my dishes. You see, I don’t like to just use a recipe. I like to research the different recipes out there for a certain dish and then combine ingredients, flavors and methods to make it my own and as always as simple as can be. I found this method from Gordon Ramsey’s site and he promised it was an easy method and boy was he right. I took his method and then used my own ingredients and the outcome was divine. The best risotto I have ever had, really, and the husband who was kinda skeptical from the beginning, said it was GREAT. I made it again for my parents and I think I made a monster out of my dad. He wanted me to “teach” my mom how to do it!

Okay, so what do you serve with risotto? I read your mind didn’t I? Well, risotto is so versatile and goes with almost any type of meat or seafood. The first time I made it I served the side with grilled fish and with my parents I did it with steak and a salad. This time around I did the best combo to date and that is instead of doing shrimp scampi with the standard pasta I did it with risotto. The shrimp scampi was to die for, like literally so good you ate too much and wanted to sleep the night away! Top the risotto with the scampi mixture or just add it on the side but either way you must make these two dishes together! I hope you enjoy all and go to the store and get the ingredients to make risotto. I find it so rewarding to make something that is kinda hard and it turns out wonderful. You will be so proud of yourself and so will I!

  4. I love to research recipes! I always try to find my top three recipes and combine the ingredients that I think will work best together. It seems to work almost all of the time.

    I absolutely love risotto. It's one of our favorite dishes- and so fun to try a gazillion different ways (red wine, champagne, dirty risotto, simple basil/tomato, vanilla/butternut squash- Giada's:).     Thanks for the risotto recipe!! I got the blue saucepan in the mail yesterday and LOVE it!! When my husband walked in the door, I had it sitting on the stove, and his jaw dropped and he stood in amazement of it for awhile :) Like I said…he's been wanting a 3 qt saucepan for awhile!     Maybe this is a stupid question, but what is "sautéed frozen veggies seasoning mix"? Is that just any seasoned frozen veggies? Gotta make sure I get this right so it can be as good as yours!
