Side Note: Forgive Me! I am posting this recipe for St. Patrick’s Day early so that we can continue with our normal programming for the rest of the week!

Happy St. Patrick’s Day! Yes you too honey! (My husband’s name is Patrick with an Irish background so he likes to think of this as “his” day!LOL!) I hope you all are ready to have a fabulous week here at Kitchen Belleicious. Today is St. Patrick’s Day, Wednesday is our third installment of the 2011 Recipe Challenge and Friday I have an amazing giveaway for you! Are you ready for it all? Let’s get started!

So in light of these St. Patrick’s day I wasn’t sure what to cook. At first I though I wanted to make something fairly normal and put a green twist on it but then out of the blue I got a facebook comment from my cousin who I haven’t heard from in almost a year and he brilliantly mentioned, “Why don’t you do an actual Irish dish Jess?”. Genius Cousin Genius! Seriously, I kinda slapped myself upside the head when I saw his comment because Duh! You can’t get more Irish than doing an Irish dish-right? I also knew I wanted to use my brand spanking new slow cooker I received from CSN Stores last week. Isn’t she a beauty. She came with a probe thermometer and all so I never have to guess if the meat is or isn’t perfectly cooked! Thanks CSN!

Well, his idea was great and I was all on board until I started researching Irish dishes. Ummm…… no offense but they don’t have the most appealing and diversified meals to chose from. Don’t get me wrong, I am sure they are all great (but notice when you go to an Irish pub that there are only a few Irish meals to chose from and the rest of the dishes are normal bar food- just sayin….)

So with much thought and aggravation I decided to attempt a homemade Corn Beef Reuben Sandwich on my homemade rye bread (Yes, I did Rye! Yes I did!) and put a little Cajun spin on it by using spicy coleslaw with cilantro and herbs. I had never made Corn Beef before and wasn’t sure if I would like it but it tasted insanely delicious. The beef was easy to cook and marinated so well with the flavors of turmeric, garlic, vinegar, beer, onions, mustard seeds, bay leaves and peppercorns!  It had such a unique richness to it unlike what you would expect seeing as how I cooked it a lot like I do my roast. We had leftovers for days and I have already incorporated the meat into a fabulous corn beef spaghetti pie and my husband’s favorite ultimate cheesy corn beef nachos!     **I made corned beef and cabbage last St. Patty’s Day for the first time. It was amazing with the most wonderful horseradish sauce. Like you, I didn’t know whether or not I would love it, but I did! Amazing.

    Thanks for sharing. I love just about any kind of sandwich topped with coleslaw! Yum!

    And corned beef spaghetti pie??????? How did you do that?? I’m having corned beef & cabbage on Wednesday @ my mom’s for our next book club meeting, so I’m deciding on a different dish for Thursday, at our house!

  11. I have been munching on Reubens this week, too. When corned beef went on sale last week, I couldn’t help picking up one (or four). I put one right into the crock pot and have been loving the sandwiches! They are so good. Yours look fabulous.

  18. Jessica! omygoodness, girl! I absolutely love what you’ve done with this sammich. I’ve never been a corned beef fan so I’ve never even considered making it. You have absolutely changed my mind. In fact, you’ve changed my mind so much that I’m not sure I will last the week without attempting to make one. You didn’t know you had so much influence did you. It looks ah-mazing!
